SPICY COCONUT, BUTTERNUT AND SWEET POTATO SOUP


This hearty soup is great to whizz up in the winter months as it is packed full of goodness, tastes delicious and is so filling. The coconut makes the soup nice and creamy while the chilli adds that extra kick. Makes 4-6 bowls


| INGREDIENTS |

1 onion 
1 large sweet potato 
1 large butternut squash 
1 medium sized apple 
1 tsp cinnamon
1/2 tsp curry powder
1/2 tsp cumin 
1/2 red chilli
800ml veg stock
2 tbsp coconut oil
1 can coconut milk
3 tbsp desiccated coconut
salt and pepper

| optional extras |
toasted pumpkin seeds
1 tbsp fresh coriander

Chop onion, sweet potato and butternut squash into chunks. Add the onion and coconut oil to the pan and cook for 4-5 minutes. Meanwhile, prepare 800ml veg stock and spices and chop your chilli. Add to the pan and cook on medium heat for 20-25 minutes or until the sweet potato and butternut squash have softened. Using a hand blender or food processor, blend the ingredients together until smooth. Return to the hob and cook for a further 10 minutes. Turn the heat down and add the full fat coconut milk, stirring regularly. Before serving stir in the desiccated coconut, himalayan sea salt and pepper. Once cooled, transfer to an airtight container and refrigerate or freeze to enjoy at a later date.
