SUNDAY BRUNCH AT HOME




This weekend involved celebrating my sister's birthday at home and what better way than with homemade pancakes, fizz and good tunes?! 

I made Deliciously Ella's blueberry pancake stack with caramelised bananas and honestly can't recommend this recipe enough! Super healthy, very filling and really tasty! GF, DF too!

As part of my sister's birthday gift, I gave her the Everything I Know About Love book. Have you read it? I'd heard such great things and since we both have a goal to read more this year, it seemed like the perfect gift!

B L U E B E R R Y  P A N C A K E  S T A C K
R E C I P E

2 tbsp chia seeds
200g GF oats
2 bananas
2 tbsp coconut oil + more to cook with
2 tbsp maple syrup (recipe indicates 3 so amend accordingly)
150g blueberries

Soak the chia seeds in 175ml of water for 20 minutes and then mix all ingredients together + 100ml of water in a food processor. Add a little coconut oil to a hot pan and cook for roughly a couple of minutes on each side.
